Fresh Raw Jumbo Prawns Shell On
Large raw prawns, whole and in the shell, heads and long antennae still on. The bodies are a translucent grey-white with a cool blue-grey cast along the back and legs, a faint pink flush coming through the tail, and pale banding where the shell segments meet. They lie in a loose curl with the flesh reading as a glossy band through the shell.
These are big enough that two or three per person is a generous serve. Because they are raw and unshelled they hold their shape and their juices through cooking, and the shells give a lot of flavour back. Split them down the back and grill or pan-fry them cut-side down so the shells char slightly and the meat stays juicy, or poach them briefly and serve cold.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
